Tonight on Inquiry we continue our talk with KARIMA MOYER-NOCCHI. She is a culinary historian specializing in Italian food. She teaches at the University of Siena. Her new book is both scholarly and entertaining: THE EPIC HISTORY OF MACARONI AND CHEESE: FROM ANCIENT ROME TO MODERN AMERICA. Tonight we talk about macaroni and cheese in America. From before the Civil War and through to World War I. This is a story of slavery, race, xenophobia, class, and the rise of the Kraft packaged mac ‘n’ cheese.
